- ¼ cup olive oil or any neutral oil
- 1 medium onion finely sliced
- 1 serrano pepper (green pepper) roughly chopped
- 2 tbsp ginger garlic paste
- 1 bottle gourd lauki
- 1 tomato roughy chopped
- ½ cup water
Whole spices
- ½ tsp cumin seeds
- a small cinnamon stick
- 8 black peppercorns
- 2 cloves
- 3 green cardamoms
- 1 black cardamom
- 1 long dried red pepper
Salt and powdered spices
- 1 tsp kosher salt
- 1 tbsp coriander powder
- 1 tsp red chili powder
- ½ tsp turmeric powder
Garnish
- 1 tsp fresh lemon juice
- 1 tbsp mint finely chopped
In a medium size skillet or pot, on medium heat, add oil, and let it heat up.
Add whole spices and let it sizzle for 5 seconds.
Now add onion and Serrano pepper.
Sauté the onion until the onion is translucent.
Add ginger garlic paste and sauté that for 10 seconds.
Now add tomato and mix.
Add powdered spices and salt.
Mix well.
Now add Bottle Gourd (Lauki) give it good mix for 1 minute.
Next add water and mix.
Place the lid on.
Let it cook on medium for 15 minutes or until bottle gourd (Lauki) is fully cooked.
Take the lid off.
Give it a good mix.
Add lemon juice.
Garnish with some mint (optional).
Serve it with a fresh chapati.
