    25-Minute Lauki Sabzi (Step by Step) also known as Lauki Ki Sabzi (Bottle Gourd curry). It's a perfect, quick, and easy recipe. This blogpost include how to cut the Bottle Gourd (Lauki) properly and all the step by step picture and video that you need to cook this delicious recipe.

    WHAT IS LAUKI SABZI?

    25-Minute Lauki Sabzi (Step By Step) is a Bottle Gourd Vegetarian curry. It comes together really quickly. It originated in India and made its made to Pakistan. This is a simple Indian/Pakistani recipe. It's doesn't require a lot of ingredients. This is my sister in law's recipe. She made it and I had to get the recipe for you. It's extremely delicious.

    This Indian/Pakistani dinner recipe is flavorful and delicious. Like alot of other Vegetables curries such as Aloo Matar Gajar and Zucchini Curry which are definition of comfort food just like Lauki Sabzi.

    HOW TO CUT THE LAUKI FOR THIS CURRY?

    Take off the end of the Bottle Gourd (Lauki).

    Peel the skin off with the peeler.

    Half the Lauki like this.

    Cut it like this half moons.

    It should look like this.

    Set aside.

    INGREDIENTS

    • Bottle Gourd- Known as Lauki, I showed you how to cut it properly for this curry in the pictures above and shown in the video as well.
    • Olive Oil- I used olive oil but you can any neutral oil.
    • Whole spices- This will give the recipe that warmth flavor.
    • Onion- I used red onion but you can use white onion as well.
    • Ginger garlic paste- I used homemade ginger garlic paste but you can store-bought ginger garlic paste as well.

    HOW TO MAKE LAUKI SABZI?

    Add oil and whole spices.

    Now add onion and Serrano pepper.

    Add ginger garlic paste.

    Now add tomato.

    Add salt and powder spices.

    Now add Bottle Gourd (Lauki).

    Add water and let it cook.

    Done.

    Serve it with a warm chapati.

    WHAT TO SERVE IT WITH

    Serve Lauki Sabzi with Basmati Rice or fresh Homemade Chapati along with refreshing crunchy Kachumber.

    Ingredients

    • ยผ cup olive oil or any neutral oil
    • 1 medium onion finely sliced
    • 1 serrano pepper (green pepper) roughly chopped
    • 2 tbsp ginger garlic paste
    • 1 bottle gourd lauki
    • 1 tomato roughy chopped
    • ยฝ cup water

    Whole spices

    • ยฝ tsp cumin seeds
    • a small cinnamon stick
    • 8 black peppercorns
    • 2 cloves
    • 3 green cardamoms
    • 1 black cardamom
    • 1 long dried red pepper

    Salt and powdered spices

    • 1 tsp kosher salt
    • 1 tbsp coriander powder
    • 1 tsp red chili powder
    • ยฝ tsp turmeric powder

    Garnish

    • 1 tsp fresh lemon juice
    • 1 tbsp mint finely chopped

    Instructions

    • In a medium size skillet or pot, on medium heat, add oil, and let it heat up.
    • Add whole spices and let it sizzle for 5 seconds.
    • Now add onion and Serrano pepper.
    • Sautรฉ the onion until the onion is translucent.
    • Add ginger garlic paste and sautรฉ that for 10 seconds.
    • Now add tomato and mix.
    • Add powdered spices and salt.
    • Mix well.
    • Now add Bottle Gourd (Lauki) give it good mix for 1 minute.
    • Next add water and mix.
    • Place the lid on.
    • Let it cook on medium for 15 minutes or until bottle gourd (Lauki) is fully cooked.
    • Take the lid off.
    • Give it a good mix.
    • Add lemon juice.
    • Garnish with some mint (optional).
    • Serve it with a fresh chapati.
