- 6 cups olive oil or any neutral oil for frying
- 2 potatoes cut long like fries
Fries Masala
- ¼ tsp red chili powder
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tsp amchur powder dried mango powder
- ¼ tsp black pepper
- ½ tsp oregano
- 1 tsp chaat masala powder
- 1 tsp kosher salt
Achieving the perfect crispness in fries involves cutting the potatoes into elongated shapes resembling traditional fries and spreading them over a layer of paper towels. Using another paper towel, gently tap the fries to remove excess moisture from all sides. Remove the top paper towel and allow the fries to air-dry, uncovered, for a duration of 10 minutes.
In a medium wok, on medium heat, add olive oil, and let heat up.
Add the potatoes and fry them until they are golden on all side.
Take them out in a plate lined with paper towel.
Make the masala mixer by adding the masala ingredients in a small bowl.
Transfer the fries in a bowl and sprinkle the homemade masala on top.
Toss it around as shown in the video.
Now masala fries are ready.
