Ingredients

  • 6 cups olive oil or any neutral oil for frying
  • 2 potatoes cut long like fries

Fries Masala

  • ¼ tsp red chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp amchur powder dried mango powder
  • ¼ tsp black pepper
  • ½ tsp oregano
  • 1 tsp chaat masala powder
  • 1 tsp kosher salt

Instructions

  • Achieving the perfect crispness in fries involves cutting the potatoes into elongated shapes resembling traditional fries and spreading them over a layer of paper towels. Using another paper towel, gently tap the fries to remove excess moisture from all sides. Remove the top paper towel and allow the fries to air-dry, uncovered, for a duration of 10 minutes.
  • In a medium wok, on medium heat, add olive oil, and let heat up.
  • Add the potatoes and fry them until they are golden on all side.
  • Take them out in a plate lined with paper towel.
  • Make the masala mixer by adding the masala ingredients in a small bowl.
  • Transfer the fries in a bowl and sprinkle the homemade masala on top.
  • Toss it around as shown in the video.
  • Now masala fries are ready.
