Marinate
- 1 lbs chicken quarters or you can use boneless chicken like chicken thighs
- 4 tbsp ginger garlic paste
- 1 tbsp yogurt
- 1 tbsp olive oil
- ½ tsp red chili powder
- 1 tsp paprika
- ¼ tsp turmeric powder
- ¼ tsp kosher salt
- 1 tsp fresh lemon juice
Garnish
- 1 green pepper finely chopped
- 1 tbsp cilantro finely chopped
- ¼ tsp fresh lemon juice
- 1 tsp ginger cut julienne
Frying
- ½ cup olive oil for frying
Marinate the Chicken
Make cuts on the chicken as shown in video.
In a bowl, add chicken ginger garlic paste, yogurt, olive oil, red chili powder, paprika, turmeric powder, salt, and lemon juice.
Cover and marinate for at least 2 hours to overnight.
Prepare the Yogurt Mixture
In a bowl or a measuring cup whip yogurt.
Add ginger garlic paste, red chili paste, coriander powder, cumin powder, and mace & nutmeg powder mixture. Mix well, and set aside.
Frying
Place a tawa on the stove, turn on the stove to medium heat.
Add olive oil for frying and let it heat up.
Place the marinated chicken on the stove, remember the stove is on medium heat.
Let it cook for 7-9 minutes then turn over and let it cook for 7-9 minutes.
Now add half a cup of yogurt and let it cook 5 minutes or until it's fully cooked on one side.
Turn over the chicken to the other side and pour some of the yogurt on the chicken and let it cook for 5 minutes or until it's fully cooked on the other side as well.
Turn over the chicken again and let it cook for 2-3 more minutes.
Turn off the stove.
Garnish it with green pepper, fresh lemon juice, cilantro, and ginger.
