    Pakistani-Style Tawa Chicken (Chicken Quarters) is a quick and easy chicken recipe prepared on a Tawa. You'll have the Tawa Chicken in three quick steps.

    WHAT IS TAWA CHICKEN?

    Pakistani-Style Tawa Chicken (Chicken Quarters) is richly seasoned with a blend of spices and pan-fried on a tawa—a flat pan. Originally from North Pakistan, this flavorful Pakistani recipe has gained popularity across the country, becoming a beloved favorite.

    Tawa Chicken is easy to prepare with just three simple steps, making it a perfect choice for effortless cooking. This Pakistani appetizer recipe, rich in authentic flavors, shares the simplicity of other quick dishes like Hariyali Chicken Tikka, Chicken Pakora, and Chicken Gola Kababs.

    The 3 STEPS TO MAKE TAWA CHICKEN

    1. Marinate the chicken.
    2. Fry the chicken on both sides on tawa.
    3. Pour the yogurt mixture on the chicken and fry again on both sides.

    INGREDIENTS

    • Chicken- I used Chicken quarters but you can use chicken breast or chicken thighs.
    • Ginger Garlic Paste- I used homemade ginger garlic paste but you can use store-bought
    • Yogurt- I used homemade full fat yogurt but you can subtitute low fat and/or store-bought yogurt.
    • Powdered spices- will give warmth and flavor to this recipe.
    • Mace & Nutmeg- need to be grinded in powder form.

    HOW TO MAKE TAWA CHICKEN?

    Grind mace and netmug in powder form in a spice mixture.

    Marinate the chicken.

    Make the yogurt mixture.

    Add some oil on a tawa, add in the chicken on the tawa.

    Cook on both sides, then add the yogurt mixture to both sides cook until the chicken is fully cooked.

    Garnish with some lemon, cilantro, and ginger. Enjoy!

    HOW TO STORE IT?

    This culinary creation maintains its freshness admirably when stored in a sealed container within the refrigerator, retaining its quality for a duration of up to five days. Furthermore, for extended preservation, the dish can be securely frozen in an airtight container for a period of up to three months.

    When ready to enjoy after freezing, a recommended approach is to thaw it overnight and then reheat it on a Tawa with some oil instead of a microwave. This method enhances the flavor, ensuring that the dish tastes as though it was freshly prepared, delivering a delightful culinary experience that mirrors the just-made sensation.

    TIPS

    1. Marinate for at least 2 hours but overnight marination is surely a game changer for the betterment of the taste of the recipe.
    2. Make sure you only use ¼ of nutmeg in the recipe.
    3. Before making the yogurt mixture make sure you whipped the yogurt so it won't have little dots of yogurt on your Tawa Chicken.

    Ingredients

    Marinate

    • 1 lbs chicken quarters or you can use boneless chicken like chicken thighs
    • 4 tbsp ginger garlic paste
    • 1 tbsp yogurt
    • 1 tbsp olive oil
    • ½ tsp red chili powder
    • 1 tsp paprika
    • ¼ tsp turmeric powder
    • ¼ tsp kosher salt
    • 1 tsp fresh lemon juice

    Yogurt Mixture

    • 1 cup yogurt full fat
    • 1 tbsp ginger garlic paste
    • ½ tsp red chili powder
    • ½ tsp black pepper
    • ¼ tsp turmeric powder
    • 2 tsp coriander powder
    • 1 tsp cumin powder

    Mace and Javitri

    • 1 mace
    • ¼ nutmeg

    Garnish

    • 1 green pepper finely chopped
    • 1 tbsp cilantro finely chopped
    • ¼ tsp fresh lemon juice
    • 1 tsp ginger cut julienne

    Frying

    • ½ cup olive oil for frying

    Instructions

    Nutmeg and Mace

    • Grind the nutmeg and mace into powder form in a spice grinder. Set aside.

    Marinate the Chicken

    • Make cuts on the chicken as shown in video.
    • In a bowl, add chicken ginger garlic paste, yogurt, olive oil, red chili powder, paprika, turmeric powder, salt, and lemon juice.
    • Cover and marinate for at least 2 hours to overnight.

    Prepare the Yogurt Mixture

    • In a bowl or a measuring cup whip yogurt.
    • Add ginger garlic paste, red chili paste, coriander powder, cumin powder, and mace & nutmeg powder mixture. Mix well, and set aside.

    Frying

    • Place a tawa on the stove, turn on the stove to medium heat.
    • Add olive oil for frying and let it heat up.
    • Place the marinated chicken on the stove, remember the stove is on medium heat.
    • Let it cook for 7-9 minutes then turn over and let it cook for 7-9 minutes.
    • Now add half a cup of yogurt and let it cook 5 minutes or until it's fully cooked on one side.
    • Turn over the chicken to the other side and pour some of the yogurt on the chicken and let it cook for 5 minutes or until it's fully cooked on the other side as well.
    • Turn over the chicken again and let it cook for 2-3 more minutes.
    • Turn off the stove.
    • Garnish it with green pepper, fresh lemon juice, cilantro, and ginger.
    • Enjoy!
