    Sweet Creamy Firni With Rice Flour is super simple and totally delicious dessert! Firni is a creamy pudding made with ground rice, half & half, and heavy cream. It’s smooth, sweet, and perfect for any time you’re craving something special. Let’s get started!

    FIRNI

    Sweet Creamy Firni With Rice Flour is a type of rice pudding, kind of like Kheer’s cousin. Firni uses ground rice and rice flour, which makes it super smooth. Kheer, on the other hand, uses whole rice, so it has a bit more textured.

    In Firni, the rice flour helps thickens and smooth up the texture, while in Kheer, the whole rice thickens the pudding as it cooks with heavy whipping cream. They both use similar ingredients—like half & half, sugar, and cardamom—but it’s those little differences that give each one its own unique taste and feel.

    I first had Firni at my maternal grandmother’s house in Karachi, Pakistan. One memory that always sticks with me is running through her house, laughing and playing with my little brother. Everything would stop the moment I heard her voice calling out, "Firni is ready!"—and I’d race straight to the kitchen.

    I still remember finding her there, standing by the stove. She dipped a teaspoon into the pot of warm Firni and gently placed it in my mouth. I swear, in that moment, I was in heaven—and I was only four or five years old. That was my very first memory of Firni, and it’s stayed with me ever since.

    I miss my grandmother deeply. This Pakistan dessert recipe has been passed down through generations. I learned it from my mom, who learned it from her mother—my beloved nani. Every time I make it, I feel a little closer to her, and a little closer to home.

    INGREIDENTS

    • Half & Half – This is made by mixing one part heavy cream and one part whole milk. It makes the Firni creamy and smooth.
    • Heavy Whipping Cream – This helps make the Firni thicker and richer.
    • Granulated Sugar – You can swap it with Splenda or Stevia if you want, but it will change the taste a bit.
    • Rice Flour – This isn’t used in regular Kheer, but it’s added to Firni to help it thicken more, since the rice is ground up.
    • Rice – Always use Basmati rice for this recipe because it gives the best texture.

    HOW TO MAKE FIRNI?

    Soak the rice.

    Place the rice in a blender.

    Place a tawa, under the pot. Add half and half, green cardamoms, and cloves in a pot. Bring it to a boil.

    Take some boiling half & half and blend the rice until you get a paste like constantly.

    Add some heavy whipping cream.

    Now add sugar let it cook.

    Next add Kewra and rice flour.

    Done!

    CAN FIRNI BE PAIRED WITH BIRYANI?

    Absolutely! Firni is the perfect dessert to complement a main dish like Biryani. In fact, I had some guests over last night and served Biryani with Firni—it was a hit! You really can’t go wrong with this classic and delicious pairing.

    TIPS

    1. Always use half & half—it gives the firni a creamier texture.
    2. Heavy whipping cream is super important because it helps make the firni thick and rich.
    3. Don’t swap out the rice flour—it makes the firni smooth and also helps it thicken up.
    4. Use a tawa (flat pan or griddle) under your pot the whole time you’re cooking, or the firni might burn and stick to the bottom.
    5. Stirring is super important—keep stirring to get the best texture!

    Equipment

    • blender

    Ingredients

    • 8 cups half & half
    • ½ cup heavy whipping cream
    • ¼ cup basmati rice
    • 1 cup granulated sugar
    • 2 green cardamoms
    • 2 cloves
    • 1 tsp kewra
    • 4 tbsp rice flour
    • water

    Garnish

    • pistachios slivered

    Instructions

    • Soak the rice in about one cup of water for 15-20 minutes.
    • Drain the rice.
    • Set aside.
    • On medium heat, place a tawa on stove, add half and half, cloves, and cardamom to a pot and place the pot on the stove. 
    • Now let it come to a boil.
    • Place the drained rice in a blender with 1-2 tbsp of that boiling half n half.
    • Grind the rice until it becomes a thick paste like constancy.
    • Stir in the rice paste.
    • Let it come to a boil then stir for 20 seconds repeat this process about 12-15 times. (Please keep a count, this process will take about 1 hr-1hr15min and also DO NOT scrub the sides.)
    • Now stir in the rice flour.
    • Keep stiring until the firni thickens this should take few minutes.
    • Next add in the heavy whipping cream, sugar and kewra.
    • Stir for 5-10 minutes nonstop until It thickens.
    • Turn off the stove.
    • Dish the Firni out into clay bowls or any kind of bowls.
    • Garnish with slivered pistachios.
