WHAT IS URAD DAL?
Urad Dal is split and skinned black gram lentils which are off-white/ivory-colored. Their color is owed to the black skins of the urad dal being taken off. However, there are other lentils which are made with the skin left on, such as makhani dal. Urad Dal, despite being a great dish on its own, is a critical ingredient in other dishes as well; Maash ki Dal is a prime example. This recipe is gluten-free, fantastic for meal-prep, and is a classic vegetarian delight.

Ingredients
Instant Pot
- 1 cup maash dal urad ki dal
- 2 cup water pani
- 1 tsp salt namak
- ½ tsp red chili powder peesi huwi lal mirchi
- 1 tbsp ginger garlic paste adrak lehsun ka paste
Stove
- ¼ cup olive oil tal
- ½ onion (thinly sliced) pyaz
- 1 medium tomato (finely chopped) tamatar
- 1 serrano pepper or green pepper (chopped) hari mirch
- 1 tbsp ginger garlic paste adrak lehsun ka paste
Whole Spices
- ½ tsp cumin seeds zeera
- 4 black peppercorns sabut kali mirch
- 3 cloves long
- 2 green cardamom hari elachi
- 2 dried long red pepper (cut into little pieces) sukhi lal mirch
Powder Spices
- 2 pinches salt namak
- 1 tsp coriander powder dhanya powder
- ½ tsp red chili powder peesi huwi lal mirch
Garnish
- fresh cilantro taza dhanya
- ginger (julienne) adrak
- ½ tsp fresh lemon juice taz lemo ka rus
- ¼ tsp garam masala powder peesa huwa garam masala
Instructions
- Wash the daal, and soak in water overnight. Drain the water before going to the next step.
Instant pot
- In the IP, press sauté mode, add 2 cup water and lentils bring it boil.
- Add ginger garlic paste,1 tsp of salt, and red chili powder.
- Seal the the lid and lastly select pressure on for 1 minute.
- Let it vent and drain the water keep it aside.
Stovetop
- In a skillet or pot, on medium heat, add oil and then let it heat up.
- Add cumin seeds, black peppercorns, green cardamom, dried red peppers, and cloves.
- Let it sizzle for 20 second while sautéing them.
- Add onion and sauté until it's lightly golden.
- Then ginger garlic paste and serrano pepper and mix well.
- Add tomato and mix well.
- Add coriander powder, red chili powder, and 2 pinche of salt.
- Mix in drained dal from the Instant pot.
- Mix it up, cover the lid and turn the heat on low for 10 min. This step will cook and dry up the excess water from the tomato and lentil.
- Check the salt according to your taste add more if needed to suit your taste.
- Garnish with lemon juice, ginger, garam masala powder, and cilantro.
