    Pakistani Maash Ki Dal (Urad Dal)

    Pakistani Maash Ki Dal (Urad Dal) is an undeniable staple, despite not being cooked as frequently as other lentils in our house. It boasts a regal tenderness, infused into its creamy texture. It is simple to make, yet packed copiously with flavor.

    WHAT IS URAD DAL?

    Urad Dal is split and skinned black gram lentils which are off-white/ivory-colored. Their color is owed to the black skins of the urad dal being taken off. However, there are other lentils which are made with the skin left on, such as makhani dal.

    Urad Dal, despite being a great dish on its own, is a critical ingredient in other dishes as well; Maash ki Dal is a prime example. This recipe is gluten-free, fantastic for meal-prep, and is a classic vegetarian delight. 

    WHAT IS MAASH KI DAL?

    Made with Urad white lentils, this Punjabi-style dal recipe is made using both an Instant Pot and the stovetop to create a deeply flavorful Maash ki dal. It is packed with warm spices and fresh ginger. This is one of the easiest Pakistani Dinner recipes like Whole Masoor Dal and Moong and Masoor Dal.

    TIPS

    • Maash Ki Dal can be made on stovetop just increase the cooking time.
    • By Soaking the lentil you increase the lentil size and decrease cooking time.

    INGREDIENTS

    Instant Pot 

    • Maash Dal- Urad ki dal
    • Water- Pani
    • Salt- Namak
    • Red chili powder- Peesi huwi lal mirchi
    • Ginger garlic paste- Adrak lehsun ka paste
    • Olive oil- Tal
    • Cumin seeds- Zeera
    • Black peppercorns- Sabut kali mirch
    • Cloves- Long
    • Dried long red pepper- Sukhi lal mirch
    • Onion- Pyaz
    • Julienned Ginger- Adrak
    • Serrano pepper or green pepper -Hari mirch
    • Tomato-  Tamatar
    • Coriander powder- Peesa hua dhanya
    • Green Cardamom- Hari Elachi
    • Fresh Cilantro- Taza dhanya
    • Fresh Lemon Juice- Lemo Ka Rus
    • Garam Masala Powder- Peesa Huwa Garam Masala

    HOW TO MAKE MASH KI DAAL?

    Soak the dal for overnight.
    It should look like this that means it's ready to cook.
    Transfer the dal in the instant pot. Bring the dal and water to a boil.
    Once it starts boiling then add ginger garlic paste, salt, and red chili powder and mix well then pressure it.
    It should look like this. Drain the water out and then set aside.
    Add oil and let it heat up.
    Add whole spices and let it sizzle for 20 seconds.
    Then add onion, and lightly sautรฉ it.
    Next add ginger garlic paste and green pepper and mix well.
    Now add tomatoes and mix well.
    Next add chopped tomato and mix well.
    Add the lentils to the pot.
    Cover the lid and turn it on low.
    Garnish with lemon juice, cilantro and ginger.

    Equipment

    Ingredients

    Instant Pot

    • 1 cup maash dal urad ki dal
    • 2 cup water pani
    • 1 tsp salt namak
    • ยฝ tsp red chili powder peesi huwi lal mirchi
    • 1 tbsp ginger garlic paste adrak lehsun ka paste

    Stove

    • ยผ cup olive oil tal
    • ยฝ onion (thinly sliced) pyaz
    • 1 medium tomato (finely chopped) tamatar
    • 1 serrano pepper or green pepper (chopped) hari mirch
    • 1 tbsp ginger garlic paste adrak lehsun ka paste

    Whole Spices

    • ยฝ tsp cumin seeds zeera
    • 4 black peppercorns sabut kali mirch
    • 3 cloves long
    • 2 green cardamom hari elachi
    • 2 dried long red pepper (cut into little pieces) sukhi lal mirch

    Powder Spices

    • 2 pinches salt namak
    • 1 tsp coriander powder dhanya powder
    • ยฝ tsp red chili powder peesi huwi lal mirch

    Garnish

    • fresh cilantro taza dhanya
    • ginger (julienne) adrak
    • ยฝ tsp fresh lemon juice taz lemo ka rus
    • ยผ tsp garam masala powder peesa huwa garam masala

    Instructions

    • Wash the daal, and soak in water overnight. Drain the water before going to the next step.

    Instant pot

    • In the IP, press sautรฉ mode, add 2 cup water and lentils bring it boil.
    • Add ginger garlic paste,1 tsp of salt, and red chili powder.
    • Seal the the lid and lastly select pressure on for 1 minute.
    • Let it vent and drain the water keep it aside.

    Stovetop

    • In a skillet or pot, on medium heat, add oil and then let it heat up.
    • Add cumin seeds, black peppercorns, green cardamom, dried red peppers, and cloves.
    • Let it sizzle for 20 second while sautรฉing them.
    • Add onion and sautรฉ until it's lightly golden.
    • Then ginger garlic paste and serrano pepper and mix well.
    • Add tomato and mix well.
    • Add coriander powder, red chili powder, and 2 pinche of salt.
    • Mix in drained dal from the Instant pot.
    • Mix it up, cover the lid and turn the heat on low for 10 min. This step will cook and dry up the excess water from the tomato and lentil.
    • Check the salt according to your taste add more if needed to suit your taste.
    • Garnish with lemon juice, ginger, garam masala powder, and cilantro.

      Wow, extremely flavorful and what I consider, restaurant quality. I cut down on the chilies but did add a little and they added another much appreciated dimension. This was tasty enough to share with my neighbor with pride. Will definitely make again to enjoy.
