I often find that simplicity breeds quality when done right -- this drink is a prime marker of this philosophy! It's a simple, fizzy drink, but has captured the heart of Pakistan.
WHAT'S A LIMCA?
Pakistani Limca is a masala-embedded drink with a wedge of limes; it's a white frizzy drink not unlike sprite. Limca is an immortalized favorite of mine, similar to my other favorite: Traditional Lassi (Yogurt Drink).
WHERE DO I FIND LIMCA ?
Pakistani Limca is one of the most common food beverages in Karachi and, safe to say, in the whole of Pakistan during the summer. The refreshing variations from one street vendor to another are astounding! When coming up with this recipe I closed my eyes, reminisced back to that fresh glass of Limca I guzzled down on the streets of Karachi in 2011, and went to work perfecting this timeless recipe.

WHAT ARE THE INGREDIENTS IN LIMCA?
- Cumin Powder
- Chaat Masala
- Black Salt
- Fresh Lemon Juice
- Wedges of Limes
- Sprite
HOW DO YOU PREPARE LIMCA?

In a fry pan, on medium heat, lightly dry roast the cumin powder.

Pour the dry roasted cumin powder in a empty small bowl.

Next add chaat masala and 1 tsp black salt and mix well.

Take 1 tsp of the masala mixture that you just made and add to an empty glass.

Now add fresh lemon juice.

Next add couple ice cubes.

Now add in the lime wedges.

Add the sprite in.

Lastly, add ¼ tsp of black salt and mix everything.

Garnish with a sprig of mint.
