    AUTHENTIC ALOO KI TIKKI

    Vaquas - Authentic Aloo Ki Tikki is one of my favorite snack recipes. This recipe is all about potatoes hence the name Aloo KI Tikki which means potato cakes. Authentic Aloo Ki Tikki is made with grated potatoes, lentils, peas, paneer,  cilantro, raisins, and spices. This recipe is filled with flavor down to every bite. It's tangy, savory, and flavorful. This is another Delhi originated recipe. I always have Aloo Ki Tikki whenever I visit Delhi.

    AUTHENTIC ALOO KI TIKKI

    WHAT IS AUTHENTIC ALOO KI TIKKI?

    Authentic Aloo Ki Tikki are South Asian potato cakes. Authentic Aloo Ki Tikki is made with grated potatoes, lentils, peas, paneer,  cilantro, raisins, and spices. This recipe is filled with flavor down to every bite. It's tangy, savory, and flavorful. If you ever in Delhi don't miss this street food and while you wait to travel to Delhi you can make this. 🙂

    HOW TO PREPARE ALOO KI TIKKI?

    First soak the chana dal and moong dal in water for 7 hours or overnight. Place your potatoes in a large plate in the microwave. Heat it up for 8 minutes, and turn the potatoes around.Heat it up for 8 minutes. Take them out place them in the fridge for 7 hours or overnight. Take out the potatoes from the fridge and peel the skin off. Grate the potatoes in a bowl and set aside. Drain all the water from the Dal. Make sure you get every ouce of water out from the dal bowl, and set it aside.

    HOW TO MAKE ALOO KI TIKKI?

    • Take cumin powder and dry roast in a fry pan.
    • Now add ½ tsp cumin powder, ½ tsp red chili powder, and ½ tsp salt to the bowl that has the grated potatoes and mix well.
    • Next mix in the rice flour and set it aside.
    • In the same fry pan that has the remainder cumin dry roast cumin powder, on medium heat, heat up 3 tbsp olive oil. (keep mixing)
    • Add coriander seeds and cumin seeds and keep mixing for 1 minute.
    • Next add in the lentils (dals) and mix it up for 30 seconds.
    • Add ½ tsp red chili powder, turmeric powder, coriander powder, amchur powder, black salt.
    • Mix everything well.
    • Next add water , mix well, and let it cook until all the water evaporates.
    • Now add in peas and paneer and mix well.
    • Let everything cook for 5 minutes.
    • Next add the raisins and mix well.
    • Add in the cilantro and mix well.

    Aloo Ki Tikki

    HOW TO MAKE THE PATTY AND FRY ALOO KI TIKKI?

    Take a medium chunk of the make a patty. Stuff that patty with the dal batter. Now close all corners carefully. Once all corners are fully closed then you place the patty between your palms and apply gentle pressure for 30 seconds off and on. After that you roll it like a wheel across your work surface. When the patty takes its proper shape then you're ready to fry. Add oil to a clean fry pan on medium heat. Heat up the oil. Place few Tikkis in there. Let it get to a beautiful orangish color and then flip it. Now let the other side get to a beautiful orangish color. Then take it out. Serve it hot.

    TIPS AND TRICKS FOR MAKING THE MOST PERFECT ALOO KI TIKKI

    1. Don't skip the rice flour, It will help you bind and it will be little crispy on the outside and soft on the inside.
    2. Don't skip the raisins it will help you with adding some sweets to the tangy taste of the Tikki.
    3. When you are frying don't move the Tikki until it's orangish from one side completely or it might break.
    4. There should be absolutely no water inside the Tikki even when you add some water to the Tikki make sure it evaporates.
    5. Make sure to place the potatoes in the refrigerator overnight after you boil them with the skin on.

    CAN I MASH THE POTATOES INSTEAD OF GRATING?

    Mashing is a big NO. the constancy will be off. you won't get the same texture as you would when grating.

    WHAT GOES WELL WITH THESE ALOO KI TIKKIS?

    You have to have the chutneys. Green Chutney and Khatti Meethi Chutney will go perfectly with this. If you want you can split the Tikki in the middle with the knife and split it open, and pour the chutneys on top with some sev .

    Authentic Aloo Ki Tikki is a must-try recipe. It's a little bit of work I must admit but worth it. If you live in US or Pakistan you must try this recipe, because I know you won't find this taste anywhere in these both regions. It's a perfect recipe for Ramadan. This recipe is toddler approved too.     Authentic Aloo Ki Tikki

    Ingredients

    • 8 potatoes
    • ¼ cup chana dal

    • ½ tsp salt as needed
    • olive oil extra virgin
    • 1 tsp cumin seeds
    • 1 tsp coriander powder hand crushed
    • 2 tsp amchur powder
    • ½ tsp black salt
    • ¼ cup water
    • ¼ cup paneer
    • 2 tbsp peas frozen
    • ¼ cup raisins
    • ¼ bunch cilantro
    • 5 tbsp rice flour

    Instructions

    Steps To Do The Day Before

    Let's Make Aloo Ki Tikki

    • Then take it out.
    • Serve it hot.
