Aloo Sabzi is a simple potato dry curry recipe meaning it has no gravy. This Aloo Sabzi is also known as Aloo Bujia and Aloo Ki Katliyan. It only takes few ingredients to get this vegetarian recipe ready. It originated in India and made its way to Pakistan.

INGREDIENTS
- Olive oil- I used olive oil but you can use any neutral oil in this recipe.
- Cumin seeds- This is the only whole spice in the recipe.
- Powdered spices- This will give this recipe some warmth and flavor.
- Potatoes- I used golden medium potatoes.
HOW TO MAKE ALOO SABZI?
Add oil and cumin seeds.
Next add potatoes.
Add salt and powdered spices.
Next add water and let it cook.
It should look like this.
Enjoy with some Chapati.

Aloo Sabzi can be paired with a fresh Chapati, our daughter also has it with some Kachumber on the side.
HOW TO STORE THIS?
Store this Indian/Pakistani recipe in an air-tight container in the refrigerator, It will last 3-4 days in the refrigerator. It's not a freezer-friendly recipe.

20-Minute Pakistani/Indian Aloo Sabzi
Ingredients
- 4 golden-medium potatoes cut in circles.
- ⅓ cup olive oil
- ¾ cup water
Whole spice
- 1 tsp cumin seeds
Powdered spices
- ½ tsp red chili powder
- ½ tsp turmeric powder
- 1 tsp kosher salt or as needed
Instructions
- In a medium-size pot, on medium heat, add olive oil, and let it heat up.
- Add cumin seeds let it sizzle.
- Then add potatoes sauté them for 2-3 minutes.
- Add powdered spices and salt and mix.
- Add water, mix, and let it come to a boil.
- Then cover the lid and let it cook for 9-10 minutes or until potatoes are done.
- Serve it with a chapati. Enjoy!
