WHAT IS PAYA CURRY?
Tender Pakistani Beef Paya (Instant Pot)features tender trotters simmered in a flavorful onion-based curry, enriched with whole and ground spices. This traditional Pakistani main dish recipe, similar to Beef Nihari and Beef Biryani, offers a mildly spiced yet deeply satisfying flavor.
This Pakistani recipe also has a Mutton Paya version. Beef Paya is an ideal dish for Eid al-Adha. Growing up, I fondly remember my maternal grandmother making it every Eid al-Adha—it was a cherished family tradition.
STEPS IN THE PERFECT PAYA
- Add the water, spices, and the Paya to the Instant Pot and pressure.
- In a pot, prepare the curry.
- Mix the Paya mixture in the Instant Pot to the curry mixture in the pot.

Tender Pakistani Beef Paya (Instant Pot)
Equipment
- Instant Pot
Ingredients
- 2 lbs beef trotters
- 5 tbsp ginger garlic paste 5 tbsp if you're using homemade ginger garlic paste and 2 tbsp if you're using store-bought.
- ½ medium onion finely sliced
- 2 tbsp olive oil
- 3 cup water
- 1 tbsp yogurt
Whole Spices
- 4 cloves
- 5 black peppercorns
- 4 green cardamom
- 1 cumin seeds
- 1 mace javitri
- ½ cinnamon stick
- 1 bay leaf
- 1 black cardamom
Powdered Spice
- 1½ tsp red chili powder
- 2 tsp coriander powder
- 1 turmeric powder
- 1 tsp kosher salt or as needed
- a pinch garam masala powder
Garnish
- 2 tsp fresh lemon juice
- cilantro finely chopped
- 1 green chili pepper finely chopped
- ginger julienne
Instructions
- Make sure all the trotters are washed properly.
Instant Pot
- Turn on the Instant Pot, on saute mode, add water and let it come to a boil.
- After it comes to boil add red chili powder, turmeric powder, salt, jivatri, and coriander powder.
- Now add in trotters and cover the lit.
- Hit the Pressure Cook setting for 40 minutes. (Time may vary depends on the quality of the trotters.)
- Vent the steam out and set aside.
- In a medium size pot, on medium heat, add oil and let it heat up.
- Add in cumin seeds, green cardamom pods, black peppercorns, cinnamon stick, bay leaf, and cloves.
- Next add onion and sauté it until brown.
- Add in 2 tbsp of ginger garlic paste and mix well.
- Add yogurt and mix well.
- Add in the gravy and trotters from the Instant Pot to the pot.
- Let it cook for 10 minutes on medium to low heat.
- Add garam masala and mix well.
- Now cover it and let it cook for 5 minutes on low.
- Garnish and serve it with a naan.

Note: 5 tbsp of Ginger Garlic paste is to much. In the Instruction the bay leaves and cinnamon stick is missing.

but 2 tbsp if you're using store-bought ginger garlic paste.
it will help remove the smell of the trotters.
ya cinnamon stick and bayleaf are added. sorry my mistake about that.

I made this recipe yesterday, it is an easy recipe to follow. I like it that you do not use readymade packet like Shan etc. I checked some other recipes and they use readymade packets.
