WHAT IS MALAI TIKKA?
Chicken Malai Tikka are chicken chunks that are marinated in a mild creamy yet rich creamy spice blend. The title of the recipe explains itself, as you know what Chicken means, Malai meaning Creamy, and Tikka means little chunks of any kind of meat. Dip this Pakistani recipe with Pakistani Green Chutney.

WHY MAKE THIS RECIPE?
It's delicious and easy. The marination can be done ahead of time. It's gluten-free. Pair up this recipe with Achari Chicken , Mutton Biryani, and Chicken Karahi.
WHY IS PRE-MARINATION STEP IMPORTANT?
Pre-Marination is important step in this recipe to keep the chicken soft and it eliminates the excess water.
HOW TO SMOKE AND WHY?
Before closing the lid and placing it in refrigerator for marinate. The smoke step comes in to give the chicken subtle smoke aroma.
- Place a steel bowl on chicken mixture.
- Heat up a coal on the stovetop.
- Once it's ignited, with the help of tong place the ignited coal in the steel bowl.
- Pour about 1 tsp of olive oil on the ignited coal.
- It should release smoke, now close the lid for 5 minutes.
- After 5 minutes discard coal and take out the steel bowl.
- Place the lid on, let it marinate in the fridge for overnight.
HOW TO MAKE CHICKEN MALAI TIKKA IN OVEN?
- Preheat the oven 475F - This process will take 10-12 minutes, can start fill the skewers with chicken while your oven preheats.
- Fill the skewer with chicken- It will be about 8-10 pieces of chicken on each skewers.
- Wrap each skewer in foil - This will assure the chicken will stay soft.
- Place it in the oven then cook it 15 minutes on each side. - Chicken will cook evenly on each side.
- Take it out and drain the water from the foil- Make sure to get the water out.
- Brush the remaining batter on the chicken- This step will give the chicken more flavor.
- Place it back in the oven and bake it for 5 min open - This step will give your chicken a brownish look.
HOW TO MAKE MALAI CHICKEN TIKKA ON BBQ GRILL?
- Heat up the grill to the highest temperature while placing the chicken on the skewer.
- Wrap each skewer in foil. This will assure the chicken will stay soft.
- Place the Chicken on the grill, let it grill for 10 minute on each side until fully cooked.
- Brush the remaining batter on the chicken. This step will give the chicken more flavor.

TIPS
- Pre-marination is an important step, so always do that.
- Marination the chicken at least overnight for best results but sometimes I do it for 3-4 days for the greatest results.
- Foiling the chicken skewer is an another very important and a secret step so your chicken won't dry out.
- Bake the chicken with foil on for 15 min then turn over the skewer and bake for another 15 minutes. So it cooks evenly on both sides.
- Don't forget to put it on broil at the end.

Chicken Malai Tikka
Equipment

Ingredients
Pre-Marination
- 1½ lbs chicken thigh (cubed) murghi ki raan ka gosht
- 1 tsp red chili powder peesi huwi lal mirch
- 1 tsp salt namak
- 3 tbsp fresh lemon juice taza lemo ka rus
Marination
- 2 tbsp olive oil zatoon ka tal
- 2 tbsp yogurt dahi
- 1 tsp white pepper safed mirch
- 1 tsp red pepper flakes dardari lal mirch
- a pinch nutmeg powder peesa huwa jaefal
- ¼ tsp garam masala powder peesa huwa garam masala
- 1 tsp cumin seeds zeera
- ½ tsp black pepper peesi huwi kali mirch
- 3 tbsp ginger garlic paste adrak lehsun ka paste
- ¼ bunch cilantro (roughly chopped) taza dhanya
- 1 green pepper (finely chopped) hari mirchi
- 1 tbsp white vinegar safed sirka
- 2 tbsp sour cream
Garnish and Baking
- 1 onion cut in squares for garnish
- cilantro roughly chopped for garnish
- 1 red bell pepper cut in squares for garnish
- ¼ cup water for the water in the bakepan while baking
- chaat masala for garnish
- fresh lemon juice for garnish
- ½ tsp olive oil for saute the bell pepper and onion
End Sauce
- 2 tbsp sour cream
- ½ tsp white pepper safed mirch
- ½ green pepper (finely chopped) hari mirchi
- ¼ bunch cilantro (finely chopped) taza danya
- 1 tbsp lemon juice lemo ka rus
Instructions
Pre-Marination
- In a bowl, add chicken, salt, red chili powder, lemon juice. Leave it for 15 minutes.
Marination
- In a separate bowl, add in yogurt, sour cream, red pepper flakes, white pepper, black pepper, garam masala, cumin seeds, nutmeg powder, salt, ginger garlic paste, cilantro, vinegar, and serrano pepper.
- Mix well.
- Now pour the yogurt mixture on your pre-marinated chicken mixture and mix well.
- Place a steel bowl on chicken mixture.
- Heat up a coal on the stovetop.
- Once it's ignited, with the help of tong place the ignited coal in the steel bowl.
- Pour about 1 tsp of olive oil on the ignited coal.
- It should release smoke, now close the lid for 5 minutes.
- After 5 minutes discard coal and take out the steel bowl.
- Place the lid on, let it marinate in the fridge for overnight.
Oven
- Preheat oven to 475F
- Apply to the chicken to the skewers.
- Don't throw away the remaining marination mixture in the bowl.
- Wrap each skewer in aluminium foil tightly twisting the ends of each skewer.
- Get out 9inby13in baking cake pan out.
- Lay the skewers which are in covered in foil on the cake pan.
- Pour water on the bottom of the cake pan.
- Place it in oven.
- Bake for 15 min then turn over the skewer and bake for another 15 minutes. So it cooks evenly on both sides.
- Now take the foil off, over the sink and take pour the water from the chicken in the sink.
- Brush the remaining marinating mixture onto the chicken on both sides that is on the skewers.
- Lay the skewers on top of the baking pan.
- Place it back in the oven, turn the oven to broil and put it in for 5 minutes.
- Now take it out of the oven and turn the skewer on the other side.
- Stick it back in the oven then cook for 5 min, so it gets cook evenly.
- Brush the end sauce after taking it out of the oven.
- Garnish with chaat masala and lemon juice.
- In a fry pan out, and sauté your onions and bell peppers lightly with olive oil.
BBQ Grill
- Place the chicken on the skewers keep little gaps between the chicken chunks.
- Don't throw away the remaining marination mixture in the bowl.
- Cover each skewer with foil. Twisting the ends so the chicken will be moist.
- Preheat the bbq grill at 500f.
- Place skewers on the grill.
- Don't throw away the left over Chicken mixture after placing all the chicken on the skewers.
- 10 minute on one side and then flip it over so it can grill on the other side for another 10 minutes.
- Take off the skewers from the grill open the foil just check if the chicken is fully cooked. if not place it on the grill for 5 more minutes on each side until its fully cooked.
- Once it's fully cooked discard the foil.
- Brush the remaining marination on the chicken skewer on all sides.
- On lowest flame of the grill, place the skewers without foil and char them for about 1-2 minutes on each side.
- Grill the veggies on a skewer at the time on the lowest flame.
After grilling or baking steps
- Place the skewers on a counter and brush the end sauce lightly on the skewers.
- Take it out, garnish with chaat masala and lemon juice.
