WHAT IS MALAI CHICKEN TIKKA?
Have you ever had Stovetop Creamy Malai Chicken Tikka? Malai Chicken Tikka is made with chicken pieces marinated in a mildly spiced, rich, and creamy blend. "Malai" means creamy, and "Tikka" refers to small chunks of meat. It’s super easy to make—just marinate the chicken and grill it on the stovetop!
This is one of the rare recipes my mom didn’t make at home while I was growing up. We always had different versions at restaurants. But when I went to Dallas and tried the Malai Chicken at a restaurant called BBQ Tonight, it was absolutely to die for!
Luckily, my husband was with me when I went to that restaurant in Dallas. Before I could even say anything, he said, "I have to recreate this recipe for the blog." After lots of testing and tweaking, he finally nailed it! Do check out the delicious Achari Chicken Tikka and Beef Tikka.

INGREDIENTS
- Chicken: I used chicken breast, but chicken thighs are highly recommended for a softer texture.
- Ginger garlic paste: I used Homemade Ginger Garlic Paste, but store-bought works just as well.
- Powdered spices: These add warmth and depth of flavor to the recipe.
- Sour cream: This is essential and doesn’t have a substitute.
HOW TO MAKE MALAI CHICKEN?
Marinate the Chicken!
Thread the chicken on skewers.
Grill it on stovetop.
It should look like this.
Make the white mixture.
Brush the white mixture onto the chicken.
TIPS
- Use Chicken thighs for a more softer result.
- Don't use high flame your chicken won't cook all the way through.
- Always use medium or medium-low flame.
- Apply the creamy sauce at the end after grilling.
WHAT TO SERVE THIS RECIPE WITH?
Serve Malai Chicken Tikka with Luscious Green Chutney.
HOW TO STORE IT?
Store it in a ziplock bag in the fridge, and it will stay fresh for 4-5 days. If you freeze it, it can last 1-2 months. When you're ready to eat, thaw it and heat it in a frying pan with 1 teaspoon of any neutral oil, like olive oil. It’ll taste just as fresh as when you first made it!

Stovetop Cream Malai Chicken Tikka
Ingredients
Marination Ingredients
- 1 lbs chicken breast or thigh
- 3 tbsp fresh lemon juice
- 2 tbsp olive oil or any neutral oil
- 2 tbsp yogurt
- 4 tbsp ginger garlic paste
- ¼ bunch cilantro roughly chopped
- 1 green chili pepper finely chopped
- 1 tbsp sour cream
- 1 tsp red chili pepper
- 1 tsp kosher salt
- 1 tsp white pepper
- 1 tsp red chili flakes
- a pinch of nutmeg powder
- ¼ tsp Garam Masala Powder
- ½ tsp cumin powder
- ½ tsp black pepper
White Mixture
- 2 tbsp sour cream
- ½ tsp white pepper
- ½ green chili pepper finely chopped
- ¼ bunch cilantro finely chopped
- 1 tbsp fresh lemon juice
Frying
- 2 tbsp olive oil
Instructions
- In a bowl, add chicken, red chili powder, salt, fresh lemon juice, oil, yogurt, sour cream, white pepper, red chili flakes, nutmeg powder, Garam Masala Powder, cumin powder, black pepper, ginger garlic paste, cilantro, and green pepper.
- Mix!
- Cover and Marinate it for 30 minutes to overnight.
- Thread the chicken onto the skewers.
Frying
- In a frying pan or grill pan add oil on medium heat and let it get hot.
- Place the skewers on the frying pan or grill pan.
- Let it cook for few minutes.
- Turn the skewers over and let it cook on the other side.
- Place a lid on a frying pan or grill pan.
- Let it cook on medium low for 4-5 minutes on each sides.
- Turn off the stove.
Make the White Mixture
- In a bowl, add sour cream, green chili pepper, cilantro, white pepper, and fresh lemon juice.
- Mix well!
Assembly
- Apply the white mixture on the chicken chunks on skewers.
- Serve it with Green Chutney.
Optional Step (These quantities are not included in the ingredient list.)
- In a fry pan, on medium heat, add 1 tbsp oil and let it get hot.
- Add onion (cut in square) and bell pepper (cut in square)
- Lightly sauté it for 3-4 minutes then turn off the stove.
- Serve it with Malai Chicken!
