    3-Minute Homemade Achari Masala packs a tangy, unmistakable punch. Take a bowl, throw everything you need in there, and that’s it - no dry roasting needed!

    WHAT'S HOMEMADE ACHARI MASALA?

    3-Minute Homemade Achari Masala is a flavorful delight with all its glory of tangy-ness. Your store runs will become obsolete once you realize the powdered and whole spices in your kitchen cabinet can make this. Check out other quick and easy spice blends like  Karahi Masala, Biryani Masala, Dahi Bara Masala.

    HOW LONG DOES THE MASALA LAST AND HOW MUCH TO USE?

    This masala should be good for 6-8 months. The recipe should make only one use’s worth of Achari masala. If you want to make more just increase the quantity of the ingredients. 

    Ingredients

    • Nigella Seeds - Also known as Kalongi in Urdu. Nigella seeds are tiny black seeds similar to sesame seeds. Frying them unleashes a unique tangy flavor. 
    • Coriander Seeds - Also known as Sabud Daniya. Coriander seeds are green seeds, and go very well with curry dishes like Achari Chicken. 
    • Fennel Seeds - Known as  Sauf in Urdu. They are another essential ingredient for the Achari masala. Fennel seeds help with digestion, and people usually eat them after dinner. 
    • Cumin Seeds - Also known as Zeera in Urdu. The most common spice in almost all South Asian savory foods. They exhibit a warm, unique taste. 
    • Turmeric Powder - Also known as Haldi in Urdu. The most important ingredient in South Asian cooking and one that is extremely essential to this masala. Turmeric powder is an antioxidant which cools the body and improves immunity. 
    • Red Chili Powder - Also known as Lal Mirchi in Urdu. It adds the element of spice into your cooking. Yet again, a very important Ingredient. 
    • Dried Mango Powder - Also known as Amchur Powder. It adds a tangy kick to your curry. 

    HOW TO MAKE ACHARI MASALA?

    Place the coriander seeds in a mortar and pestle, and gently crush them.
    Next place the gently crushed coriander seeds in a bowl, add cinnamon, nigella seeds, fennel seeds, cumin seeds, cloves, black cardamom, green cardamom, and black peppercorns.
    Now add turmeric powder, red chili powder, dried mango powder, coriander powder, garam masala powder, and salt.
    Mix well!

    Ingredients

    Whole Spices

    • 2 tsp coriander seeds sabut danya
    • ½ tsp nigella seeds kalongi
    • 1 tsp cumin seeds zeera
    • ½ tsp fennel seeds sauf
    • 1 cinnamon stick dal chini
    • 2 cloves long
    • 5 black peppercorns sabut kali mirch
    • 3 green cardamom pods sabut hari elachi
    • 1 black cardamom kali elachi

    Powder Spices

    • 2¼ tsp dried mango powder amchur powder
    • 1¼ tsp red chili powder peesa huwi lal mirchi
    • 2 tsp coriander powder peesa huwa danya
    • 1 tsp turmeric powder haldi
    • ¼ tsp garam masala powder peesa huwa garam masala
    • 1½ tsp salt namak

    Instructions

    • Add coriander seeds in a mortar pestle and gently crush them.
    • Now transfer in a bowl, now add the rest of the whole spices.
    • Next add the powder spices and salt to the whole spices.
    • Mix everything well and its ready!
