WHAT IS BHUNA GOSHT?
Flavorful Pakistani Bhuna Mutton Gosht is a one-pot recipe. The term 'Bhuna' refers to the sautéing process where the ingredients break down, creating a textured and thick masala, while also achieving a delightful browning of the meat. This Pakistani/Indian main dish recipe is extremely flavorful and mild-spiced.
This recipe, originating in the Bengal region of India, has traversed its way to Pakistan. Utilizing the Instant Pot for expedited cooking, its consistency mirrors that of several other Pakistani/Indian recipes, such as Achar Gosht and Achari Chicken.
INGREIDENTS
- Oil- I used olive oil, you can substitute any neutral oil you would like.
- Onion- I used red onion, but you can substitute white/yellow onion.
- Meat- I opted for mutton, but you can choose lamb or chicken as well. If you go for chicken, you can cook it on the stovetop without needing an Instant Pot.
- Yogurt- I used homemade yogurt, you can use store-bought yogurt. This is a base of the recipe.
- Whole and Powder spices- These spices will add warmth and flavor to your recipe.
HOW TO MAKE BHUNA GOSHT?
Now add the mutton.
Add salt and powder spices.
Now add yogurt.

Serve Bhuna Gosht with a fresh Chapati aside of Kachumber. In some parts of India, they serve this recipe with Basmati Rice or Zeera Rice.

Flavorful Pakistani Bhuna Mutton Gosht
Equipment
- Instant Pot
Ingredients
- ⅓ cup olive oil
- 1 lbs mutton
- 1 onion finely sliced
- 4 tbsp ginger garlic paste (This quantity is for homemade ginger garlic paste if you use store-bought just use 2 tbsp of ginger garlic paste.)
- 2 green pepper
- ½ cup yogurt
- 1 tbsp cilantro freshly chopped (for garnish)
Whole spices
- 1 bay leaf
- 2 black cardamoms
- 4 cloves
- 1 cinnamon stick
- 1 javitri
Powdered spices
- 1 tbsp coriander powder
- 1 tsp red chili powder
- ½ tsp turmeric powder
- ¼ tsp garam masala powder
- ½ tsp black pepper
- 1 tsp kosher salt
Instructions
- In a Instant Pot, on sauté mode, add oil, and let it heat up.
- Add whole spice, sauté that for 5-10 seconds.
- Add green pepper and onion.
- Sauté until translucent.
- Add ginger garlic paste and meat.
- Mix well for 2 minutes continuously.
- Now add salt and powder spices and mix well for 1 min continuously.
- Add in the yogurt.
- Mix everything well for 5 minutes.
- Cover and Pressure for 15 minutes or until the meat is tender.
- Let it vent and let all the steam come out. Take off the lid.
- Set it on saute mode again.
- Mix it for 6 minutes continuously.
- Turn off the Instant Pot.
- Garnish with fresh chopped cilantro.
- Serve it hot with a hot chapati.
