WHAT IS DUM KA KEEMA?
Pakistani-Style Dum Ka Keema (Smoked Ground Beef) is truly unique. This simple Pakistani recipe involves adding all the ingredients to a pot, sealing it, and letting it cook—then, your Dum Ka Keema is ready. Originating in Pakistan, this recipe is quite popular in many Pakistani restaurants.
This Pakistani dinner recipe features smoked ground beef. The addition of chana powder and raw papaya (kacha papita) makes the ground beef incredibly tender, similar to the softness of Beef Tikka and Mutton Chaaps.
WHAT MEAT IS KEEMA MADE OF?
Keema refers to ground meat, which can be either ground chicken or ground mutton. In this recipe, I used ground beef, but you can substitute it with ground mutton or ground chicken. However, if you choose ground chicken, there's no need to add raw papaya.
INGREDIENTS
- Ground Beef- I used 80/20 ground beef but you can use 90/10 as well.
- Fried Onion- I used store-bought fried onion but you can use homemade.
- Ginger garlic paste- I used homemade but you can use store-bought.
- Chana Powder- Dry roasted chickpeas just grind them into powder form.
- Whole and Powder spices- This will give lots of flavor and warmth to the recipe.
HOW TO MAKE DUM KA KEEMA?
Make the Chana powder.
Add all the ingredients in a pot.
Mix well.
Smoked it!
Seal it!
Unseal it, Mix it, Garnish it, and Enjoy!
HOW TO SERVE IT?
Serve Dum Ka Keema with Paratha. Some people like my brother eats with Basmati rice.

Pakistani-Style Dum Ka Keema (Smoked Ground Beef)
Ingredients
- 1 lbs ground beef
- ⅓ cup olive oil or any neutral oil
- ⅓ cup fried onion
- 4 tbsp ginger garlic paste
- ½ cup yogurt
- 1 green pepper roughly chopped
- ½ cup water
- 2 tbsp raw payaya kacha papita
Whole Spices
- 2 black cardamoms
- 3 green cardamoms
- a small cinnamon stick
Powdered Spices
- 1 tsp red chili powder
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp black pepper
- ½ tsp javitri powder
- ¼ tsp nutmeg powder
- 1 tsp kosher salt or as needed
Chana Powder
- ¼ cup dry roasted chickpeas roasted chanay
Smoked
- 1 coal
- 1 tbsp olive oil
Garnish
- ¼ inch ginger julienne
- 1 tsp fresh lemon juice
Other Ingredient
- water
Instructions
Chana Powder and Raw Papaya
- Add ¼ cup of dry roasted chickpeas in a spice grinder.
- Grind until powder form.
- Set aside.
- Pulse or Grind the raw papaya chunks in a little blender.
- Set aside
Dum Ka Keema
- In a medium size pot, add oil, ground beef, fried onion, ginger garlic paste, grinded raw papaya, roasted chickpea powder, green pepper, whole spices, and powdered spices.
- Mix well crushing the ground beef until it's mushy.
- Add ½ cup water.
- Mix well!
- Smoke it. (Heat up the coal on a stove, after it gets heated, then place a small steel bowl on top of the ground beef mixture. Next place the hot coal in the steel bowl then pour 1 tbsp oil. It's going to create smoke. Immediately place to capture the smoke for 30 seconds-1 minute. Release the smoke by removing the lid. Discard the coal and take steel bowl out of the pot and set aside.)
- Mix well!
- Cover the lid with aluminum foil then place it on the pot.
- Cover the lid and pot with aluminum foil like we did in the video.
- Turn on the stove on medium heat and let it heat up.
- Place the sealed pot on the stove.
- Let it cook for 15-20 minutes or until the ground beef is fully done.
- Unseal the pot.
- Give it a quick mix.
- Add ¼ cup more water and mix well.
- Let it cook on medium-low for 5 minutes. (Remember don't place the lid on for the step.)
- Turn off the stove.
- Garnish with fresh lemon juice and ginger.
- Serve immediately with a warm paratha.
- Enjoy!
